Pasta with Greek Strained Yogurt and Mint

During this past summer when my mother visited the states, she made this delicious cold side pasta dish that was cool and comforting. Zipped with garlic, pine nuts and dried mint, it’s a simple but audacious dish to bring to the table. You can make this with any sort of pasta you’d like or have in your kitchen cabinet. Having said that, I used a whole grain spaghetti and the dish had a nuttier quality to it. This enhanced the flavor altogether.

This will make 2/3 servings:

3 fists of cold pasta cooked al dente
2 tablespoons of dried mint
5 tablespoons of plain Greek strained yogurt (or plain yogurt)
3 teaspoons of garlic powder or fresh garlic
2 teaspoons of salt
2 teaspoons of pepper
A handful of pine nuts

Mix everything but the pasta together and fold in the pasta at the very end. Serve chilled.
